Hi Umberto. Why can't I check these boxes in the settings?

Because the airplane integration have forced them to be set as they expect them to be.

This happens with the Fenix A320. Is there any way to fix this?

And why you think this is something that must be "fixed" ?

Fenix decided those setting must be set that way to not screw up the integration they wrote (you can see they suggest to set them that way in their docs, this was before they had the ability to force them), so they are locked in, to prevent you causing issues to the integration if they are not set the way the expect it to be.

Well, it's not okay when a tanker truck pulls up, you press the gas station and it leaves in 30 seconds. It's good that you clarified this. This is a very bad decision by them. I will write to FENIX technical support.

I don't know why you think it's their "very bad decision", they wrote the integration, they know which settings works best, as you can see here:

Those are the recommended  settings so, since a while ago, GSX allows to set LVars so they can be set automatically, so you don't risk issues because you set them otherwise.
