It's likely an issue related to objects LOD levels, which are more aggressive on Xbox than on PC, and even more aggressive on the Xbox Series S, due to its limited memory ( 10GB of shared memory compared to 16GB of the Series X ).

While on PC you could control the Objects LOD levels with a slider, on Xbox there are no sliders, so I guess the settings for a Series S is likely lower than the 100% which is PC default on "High" settings so, our carefully optimized LOD levels which were made using the standard 100% value on PC to obtain a good fps considering the extremely big since of the airport, the huge number of jetways ( about 200 ) and their much higher quality compared to default jetways, might look very different on Xbox, especially the S.

This because, the lower LODs don't have animations, which saves extra fps but, on PC, they usually appear for farther way.

One thing you can do to lessen the problem, is to Zoom in the view, and see if they snap back in the closed position, since LODs are also affected by the Zoom settings.

In fact, the fact a small and cheap console like the Series S can even RUN MSFS, let alone an add-on for one of the biggest/most complex airports in the world together with it, it's impressive in its own right.
