How can I edit scenery with this software?

By reading the manual, first. If something is not clear there, then please indicate precisely what it is, and we'll try to clarify it better.

Note that, GSX will never modify any scenery. The most you can do ( with Level 2 ) is to create a separate Exclude file to disable default jetways for a 3rd party scenery, but everything else is just GSX customization, with no effect on the scenery itself.
