Every time I log into my sim PC Windows opens one of these "what program do you want to open this file" dialogs. It usually goes away after ~10 seconds or so. But it really shouldn't be there in the first place. When I open the file in an editor it turns out to be related to Couatl.

How to get rid of this? Thanks!

It seems you have a program on the Windows startup list, which is supposed to open .LOG files, maybe an editor you used to look the FSDT Updater log file, so it's probably trying to open the last file you opened, and it's doing this because it's configured as a startup program.
The updater log file, located here:
C:\Users\Roman Geber\AppData\Roaming\Virtuali\UpdateCache\Couatl_Updater.LOG
Is from August 8th, 2017, so it's surely not something related to anything you installed recently, you probably opened that file manually once, with that startup program you have in Windows.
Check all the start up programs: in Windows 10 it's fairly easy:
