After I relinked to gsx, the menu bar appeared, but there were no vehicle models, so I searched for related solutions and deleted the C:\ProgramData\Virtuali\Couatl folder, then restarted Couatl, it got stuck at “building gsx world models cache
100%”

Your log shows the sim simply stopped responding to Simconnect calls, which caused even the GSX WASM module to timeout waiting for a connection that didn't came. Check if restarting Windows helps, sometimes when there's too many objects in the sim, Simconnect simply stops until a reboot.

It's not a new problem, is probably the same one which caused the menu stuck: too many Simobjects, which not only makes the menu stuck because Simconnect stopped working, but it also prevent the sim to create new ones, so they are invisible.
The GSX manual has a chapter called "Missing Objects" in the Troubleshooting section, have a look at it, no use repeating it here.
