Title: GSX not showing up in tool bar

Downloaded GSX but when I open a flight there is nothing in the toolbar to open it? How do I access it?

Have you noticed any errors while installing ? Do you have the links in the Community folder to the two gsx packages ?

I didn't notice any errors while installing, but I checked the community folder and GSX is not in there

I redownloaded GSX but when I go to the Community folder I see:

XboxGames>Community>AddonManager>MSFS>Fsdreamteam GSX Pro

                               This Folder is Empty

Just uninstall al GSX related stuff then removed the addon folder... after that use the latest universal installer form FSDT and reinstall all the stuff, also when couatl isn't started automatically you can do it manually after a sim start ;-)
That worked here local :-) Make sure to run couatl.exe as admin too..

This is where I have GSX installed. The FSDT installer shows active but STILL doesn't show up in the MSFS toolbar.

Do you have links to both GSX packages in the Community folder ? That's the main thing that allows/prevents the add-on to be seen in the toolbar.

Sure, if the file is not there, it can only mean the antivirus must have killed it. Configure the antivirus to exclude the whole Addon Manager folder and run the FSDT Live Update again, or the Offline Installer:
