I have the density in GSX's menu set to Sparse, but it still takes ages to load the plane. I've been sitting here for almost 45-60 minutes and it still showing like 185/364 passengers loaded.

I have the density in GSX's menu set to Sparse
And that's precisely the reason why it takes longer.
Density means "density", it doesn't mean the number of passengers boarded. The number of passenger boarded will never change so, if you lower their density, the same number of passenger will take longer to board, since there are less of them visible at any given time.
This is of course explained in the manual, Page 27:
it’s possible to control the passenger Density, which will affect the number of animated passengers visible on screen at any given time.
Setting the slider towards the highest density settings will shorten boarding and deboarding times, but with some cost in performances.

I am not using GSX Level 2. So there shouldn't be any animated characters. So how long should it take for passengers to board the PMDG 747 considering the passenger density is set to Normal?
It's been over 1 hour for me already.

And you should have said that. Page 27 of the GSX manual has the whole "Density" explanation in a paragraph that starts with a big blue sign which says "GSX Level 2 Expansion only"
If you don't have GSX L2, the density doesn't have any effect but, instead, the timings are controlled by the settings in the Couatladdons.ini file, explained at Page 25 of the GSX Manual.

boarding_time = 0
boarding_time_factor = 0.1
boarding_time_min = 15.0
What values should these be if I want the full plane of 364 passengers to be boarded in 10 minutes?

0.1 = 10 passengers per seconds, which means 36.4 seconds + 15 of minumum time, which means the boarding time should be 51.4 seconds.
Note that, if the airport has SODE jetways, I think the slider will work AS IF you were using GSX L2, just without passengers so, if you want to have a shorter boarding, you must set the slider to the highest density and of course, since there's nobody to be seen, it won't have any effect on fps.

boarding_time = 51.4
boarding_time_factor = 0.1
boarding_time_min = 15.0
Is that correct?
-
No, it's not.
You should have just left the values as they were, I only calculated how much time it would take with the values you had. You haven't told me what would be the boarding time you would like to have, the 51.4 was the RESULT of that particular case.
-
I would like to have all 364 passengers boarded within 10 minutes. Those values I posted were the default.

Than something about 1.5 should work. Again, please re-read my note about SODE jetways. Those timings are valid only if the jetway is not SODE. If it is, the slider matters.

boarding_time = 0
boarding_time_factor = 1.5
boarding_time_min = 15.0
Like this? I'm using Flightbeam's KSFO and I believe the jetways are SODE. Eitherway, some of the airports I fly into don't have SODE jetways. So I would like to make the boarding times faster for both airports with SODE and those without.

Yes, that seems about right.
