Title: ALTITUDE HOLD

Could anyone assist in explaining what one needs do if they want to set their altitude to a certain height and stay and fly at that height. Any assistance would be appreciated.

Refer to the sticky post titled "Autopilot and Radio explainations".

Note that you can't preselect an altitude. You have to reach that altitude first, than "lock it" pressing BALT button. Then you can increase/decrease the altitude bug using the standard FSX keyboard commands. You can also check the autopilot status by going to the ACL page on the MFD.
