Title: GSX or COUATL problem

Twice, Couatl.exe has stopped GSX, telling me, in a window, that the cause of the problem is my Antivirus (Norton360). And yet, in the NORTON settings I put ALL in the COUATLexe program from Addon Manager. Can you help me please? ???

As the message says, configure the antivirus correctly, by being sure it has exclude THE WHOLE ADDON MANAGER FOLDER (this is what thee message is telling you to exclude, not just the Couatl.exe file).

Then reinstall GSX or run the Live Update, because the defective antivirus (Norton is known to be the worse offender for false positives), might have removed it entirely.

I open Norton 360 IMPOSTAZIONI - SCANSIONI E RISCHI  ESCLUDI SCANSIONE and it appear C:\Program Files (X86) ADDON MANAGER. It is here,  among the other files excluded.
The problem is non this.

It's not clear from your message if Couatl is not starting with the simulator, or it has quit/crashed after doing something.

Of course, reinstalling GSX surely have reinstated the files your antivirus mistakenly removed.
