Hello,

I do not have the %APPDATA%\Virtuali\Airplanes folder to edit the GSX.cfg of an aircraft.

That's normal, if you never edited an airplane before. It's created automatically when you use the GSX airplane configuration editor and create a new configuration or modify an internally supported airplane.
