If you mean when you hit SHFT+J you see the Foch PA1 first on the list presented, then you can open either the aicarriers.cfg file, or, if you have any, one of the .cfg files in the conf.d folder in the AICarriers folder. In either case, there will be a .cfg file with [formation.X] (where X is a number), that has the Foch PA1 you don't want listed. Delete the entire entry under the [formation.X] heading you found with the PA1 in it, then renumber all the other [formation.X] headings in that .cfg file to make them correct again. They must start with [formation.0] and number sequentially up from there. Save the file, and the ship is gone from the AICarriers menu. This will work for any ship or formation of ships you don't want showing in AICarriers menu. Of course, as long as there is an aicarriers.cfg file with at least 1 [formation.X] entry in it, you can delete, rename, or move the .cfg file(s) in the conf.d folder you don't want showing up in the menu. I personally switch .cfg files in and out of a \AICarriers\conf.d\BAXX folder I made as I desire the ship(s) to be in the menu or not.
If, on the other hand you mean that you SEE the PA1 sailing serenely along when you load the game in, you must look in the folder ...\FSX\Scenery\World\scenery (NOT ...\addon scenery\..., note), and look for a file that will most likely start with the word "traffic" and then mention the PA1 in some manner. Like traffic_Foch_Pa1.bgl just as an example. Move it out to a backup folder you create, or delete it, or rename it, like traffic_foch_PA1.lgb (I just reversed the .bgl suffix), or traffic_Foch_Pa1.BAK, or whatever you like to use. That will get rid of that particular ship on that particular route.
