what am I doing wrong?
why can't I select the custom settings Handling and Catering (gray colored) ?

You don't say which simulator you use. If you use Prepa3d V5, it's entirely normal, since logo customization requires DirectX 11 Render To Texture, which is currently not available in P3D V5, since we'll have to rewrite that part of the software in DX12, as discussed here:

Well, FSX never had Render to Texture to begin with, so the Custom texture feature is not available and not possible. The manual flags this in Red, under the "P3D4-only" features.
