You said you were able to install by adding the folder manually, which I guess you meant you used the "Browse sim..." button, which is there for the precise reason to allow you to find a supported simulator if the installer cannot find it for some reason.
I don't think you have to reinstall but, since you then posted a crash, which doesn't obviously happen here ( I only use FSX:SE ), maybe reinstalling might help. Yes, you need to create that empty folder, and reinstall.

Hi Umberto! Nice update there...So I was wondering if we need to do anything else manually to get the PMDG 747 V3 to work properly? because GSX is still behaving just like before the update was installed.
I'm not being notified by the catering crew to open doors, they'll go right through them.
Loading of baggage/cargo positions are messed up. both of them are in the aft cargo area right next to each other. which doesn't make sense because I don't see how those giant crates could fit in the bulk cargo area.
Also because they're so close together maybe that's what's stopping the animations from happening. (this will interrupt the boarding process indefinitely)
I also get notified to open "exit 2" constantly with this aircraft. everything is opened and I still get prompted with that...Any ideas?

That's because you probably already downloaded a customization made by another user, and user customizations always take precedence over the internal one, as explained here, in this same thread:
